Ingredients
  

Beef Filling
  • 1 lb ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • to taste salt and pepper
Assembly
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • as needed oil for frying

Equipment

  • Large skillet
  • Tongs
  • Paper towels

Method
 

  1. Cook ground beef in a skillet until browned.
  2. Add onion and garlic; cook until softened.
  3. Season with spices and remove from heat.
  4. Fill tortillas with beef and cheese, then roll tightly.
  5. Fry seam-side down until golden and crispy on all sides.
  6. Drain briefly and serve hot.

Notes

Can be baked or air-fried for a lighter option.
