- Rinse barley under cold water and drain.
- Heat oil or butter in a skillet over medium heat.
- Sauté onion until soft, then add garlic and cook briefly.
- Add mushrooms and cook until browned and fragrant.
- Stir in barley, broth, and thyme. Bring to a simmer.
- Cover and cook on low heat for 35–40 minutes until tender.
- Season with salt and pepper and rest before serving.
