Ingredients
  

Main Dish
  • 1 cup pearl barley rinsed
  • 2 cups mushrooms sliced
  • 3 cups vegetable or mushroom broth warm
  • 1 tbsp olive oil or butter
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme
  • salt and black pepper to taste

  • Wooden spoon

Method
 

  1. Rinse barley under cold water and drain.
  2. Heat oil or butter in a skillet over medium heat.
  3. Sauté onion until soft, then add garlic and cook briefly.
  4. Add mushrooms and cook until browned and fragrant.
  5. Stir in barley, broth, and thyme. Bring to a simmer.
  6. Cover and cook on low heat for 35–40 minutes until tender.
  7. Season with salt and pepper and rest before serving.

Notes

Finish with olive oil or Parmesan for extra richness.
