Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1.5 tsp ground ginger
  • 1 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.25 tsp ground nutmeg
  • 0.75 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 0.25 cup molasses unsulphured
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.33 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, and spices in a medium bowl.
  3. Cream butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla.
  4. Gradually mix in dry ingredients until just combined.
  5. Roll dough into balls and coat in granulated sugar.
  6. Bake 10–12 minutes until crackled and set around the edges.
  7. Cool briefly on baking sheet, then transfer to wire rack.

Notes

For extra chewiness, slightly underbake and allow cookies to finish setting as they cool.
