Method
- Preheat oven to 400°F (200°C).
- Wash, dry, and halve potatoes if large.
- Toss potatoes with olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
- Spread potatoes on baking sheet and place feta block in center.
- Bake 35–40 minutes until golden and tender.
- Broil 2–3 minutes if desired for extra browning.
- Mix softened feta with potatoes and finish with lemon juice and parsley.
Notes
For extra crispiness, avoid overcrowding the pan and roast cut-side down.
