  • 2 lbs baby potatoes halved if large
  • 7 oz block feta cheese
  • 4 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 lemon juiced
  • 1 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash, dry, and halve potatoes if large.
  3. Toss potatoes with olive oil, garlic, oregano, thyme, paprika, salt, and pepper.
  4. Spread potatoes on baking sheet and place feta block in center.
  5. Bake 35–40 minutes until golden and tender.
  6. Broil 2–3 minutes if desired for extra browning.
  7. Mix softened feta with potatoes and finish with lemon juice and parsley.

Notes

For extra crispiness, avoid overcrowding the pan and roast cut-side down.
