Ingredients
  

  • 1.5 lbs baby potatoes
  • 200 g feta cheese block
  • 4 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 1 tsp dried oregano

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Cut potatoes and toss with olive oil, garlic, salt, pepper, and oregano.
  3. Place potatoes in a baking dish and add feta block in the center.
  4. Bake for 40–45 minutes until potatoes are golden and tender.
  5. Mash feta slightly and mix with potatoes before serving.

Notes

Add lemon zest or chili flakes for extra flavor.
