Ingredients
  

Potato Base
  • 1.5 lb baby potatoes halved
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
Feta & Finish
  • 7 oz block feta cheese
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp fresh herbs thyme or rosemary

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking dish with parchment paper.
  2. Toss potatoes with olive oil, garlic, salt, and pepper.
  3. Spread potatoes evenly in the baking dish and place feta in the center.
  4. Drizzle feta with olive oil and sprinkle with lemon zest.
  5. Bake for 40–45 minutes, flipping potatoes halfway through.
  6. Mash feta gently and mix with potatoes.
  7. Finish with lemon juice and herbs before serving.

Notes

Best served hot and crispy. Reheat in oven for optimal texture.
