  • 1 block feta cheese
  • 4 eggs large
  • 1.5 cups cherry tomatoes
  • 2 cups fresh spinach
  • 2 tbsp olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Place feta and tomatoes in a greased baking dish and drizzle with olive oil.
  3. Bake for 15 minutes until feta softens.
  4. Add spinach and crack eggs into wells.
  5. Bake 10–15 minutes until eggs are set.

Notes

Serve immediately with crusty bread.
