Pastry
  • 1 package gluten-free puff pastry
  • 2 tbsp powdered sugar
Apple Filling
  • 3 apples thinly sliced
  • 2 tbsp butter
  • 3 tbsp granulated sugar
  • 0.5 tsp cinnamon
  • 1 tbsp lemon juice
Vanilla Custard
  • 2 cups whole milk
  • 0.5 cup granulated sugar
  • 3 egg yolks
  • 2 tbsp cornstarch
  • 1 tbsp butter
  • 1 tbsp vanilla extract

Method
 

  1. Preheat oven to 400°F (200°C). Cut and bake puff pastry until golden.
  2. Cook apples with butter, sugar, cinnamon, and lemon until tender.
  3. Prepare custard by heating milk and whisking with egg mixture until thickened.
  4. Cool all components completely.
  5. Layer pastry, custard, and apples. Repeat and finish with pastry.
  6. Dust with powdered sugar and chill before serving.
