Method
- Preheat oven to 325°F (165°C). Prepare a springform pan with parchment.
- Mix crust ingredients, press into pan, and bake for 10 minutes. Cool.
- Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs.
- Pour filling over crust and smooth the top.
- Toss apples with sugar, cinnamon, and lemon juice. Layer over cheesecake.
- Combine crisp topping ingredients and sprinkle over apples.
- Bake 60–70 minutes until center is just set. Cool gradually.
- Chill at least 4 hours before serving.
Notes
Best served chilled. Allow cheesecake to rest overnight for clean slices.
