Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Cheesecake Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 0.5 cup sour cream
  • 3 eggs large
  • 1 tsp vanilla extract
Apple Layer
  • 3 cups apples peeled and sliced
  • 0.5 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
Crisp Topping
  • 0.75 cup rolled oats
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.5 cup unsalted butter cold, cubed

Equipment

  • Mixing bowls
  • Springform pan

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 325°F (165°C). Prepare a springform pan with parchment.
  2. Mix crust ingredients, press into pan, and bake for 10 minutes. Cool.
  3. Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs.
  4. Pour filling over crust and smooth the top.
  5. Toss apples with sugar, cinnamon, and lemon juice. Layer over cheesecake.
  6. Combine crisp topping ingredients and sprinkle over apples.
  7. Bake 60–70 minutes until center is just set. Cool gradually.
  8. Chill at least 4 hours before serving.

Notes

Best served chilled. Allow cheesecake to rest overnight for clean slices.
