- Preheat oven to 350°F (175°C). Prepare mini muffin tin.
- Sift flour with half the sugar.
- Whip egg whites with cream of tartar and salt to soft peaks.
- Gradually add remaining sugar and beat to stiff peaks.
- Fold in vanilla and flour mixture gently.
- Fill tins 3/4 full and bake 12–15 minutes.
- Cool slightly, brush with butter, and roll in cinnamon sugar.
Notes
Coat while slightly warm for best cinnamon sugar adherence.
