Ingredients
  

Angel Cake Bites
  • 1 cup cake flour
  • 1 cup granulated sugar divided
  • 6 egg whites room temperature
  • 1 tsp cream of tartar
  • 1 tsp vanilla extract
  • 0.25 tsp salt
Cinnamon Sugar Coating
  • 0.5 cup granulated sugar
  • 1.5 tsp ground cinnamon
  • 3 tbsp unsalted butter melted

Equipment

  • Mixing bowls
  • Mini muffin tin
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Prepare mini muffin tin.
  2. Sift flour with half the sugar.
  3. Whip egg whites with cream of tartar and salt to soft peaks.
  4. Gradually add remaining sugar and beat to stiff peaks.
  5. Fold in vanilla and flour mixture gently.
  6. Fill tins 3/4 full and bake 12–15 minutes.
  7. Cool slightly, brush with butter, and roll in cinnamon sugar.

Notes

Coat while slightly warm for best cinnamon sugar adherence.
