Ingredients
  

Pastry Filling
  • 4 cups fresh spinach chopped
  • 2 tbsp olive oil
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 1 cup feta cheese crumbled
  • 0.5 cup ricotta cheese
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
Pastry
  • 2 sheets puff pastry thawed
  • 1 egg beaten

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a pan and sauté onion until soft. Add garlic and cook briefly.
  3. Add spinach and cook until wilted. Remove from heat and cool.
  4. Mix spinach with cheeses, herbs, salt, and pepper.
  5. Cut pastry into squares and add filling to center.
  6. Fold, seal edges, and brush with egg wash.
  7. Bake 25–30 minutes until golden brown.

Notes

Best served warm. Can be frozen before baking.
