Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat olive oil in a pan and sauté onion until soft. Add garlic and cook briefly.
- Add spinach and cook until wilted. Remove from heat and cool.
- Mix spinach with cheeses, herbs, salt, and pepper.
- Cut pastry into squares and add filling to center.
- Fold, seal edges, and brush with egg wash.
- Bake 25–30 minutes until golden brown.
Notes
Best served warm. Can be frozen before baking.
