Ingredients
  

Cookie Dough
  • 1 cup natural sugar-free peanut butter unsweetened
  • 0.5 cup sugar-free granulated sweetener erythritol or monk fruit
  • 1 egg large

Equipment

  • Mixing bowl
  • Baking sheet
  • Fork
  • Wire rack

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix peanut butter, sweetener, and egg in a bowl until smooth.
  3. Scoop dough onto baking sheet and flatten with a fork.
  4. Bake for 10–12 minutes until edges are set.
  5. Cool on baking sheet, then transfer to wire rack.

Notes

Do not overbake. Cookies firm up as they cool.
