Ingredients
  

  • 1 cup roasted red peppers jarred or homemade
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 cup heavy cream
  • 0.25 cup Parmesan cheese grated
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Equipment

  • Skillet
  • Pasta pot

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and sauté until fragrant, about 30 seconds.
  3. Add roasted red peppers and warm through.
  4. Blend the mixture until completely smooth.
  5. Return sauce to the skillet and stir in cream.
  6. Add Parmesan, salt, pepper, and red pepper flakes if using.
  7. Toss with cooked pasta, loosening with pasta water if needed.

Notes

Add pasta water gradually to adjust sauce consistency.
